Frito Pie State Fair Corn Dog Recipe

It wasn’t until we moved to Austin, Texas that we learned about Frito Pie. Upon first thought, it seems like some salty-sweet dessert. In reality, it’s not even a pie. Our first Frito Pie was served up at a Texas Longhorns tailgate. A bag of snack size corn chips was sliced open, topped with Texas chili, jalapeños, cheese, and onions. Talk about perfectly portable! It is essential to soak up all the cold beer before heading into the stadium for legendary Texas football.

Nothing says “Texas” like football, spice, and their iconic fairs and festivals. We created this recipe as a unique spin on a Texas Frito Pie! To celebrate TexFest, we are making a custom recipe utilizing State Fair® Corn Dogs, which we bought at HEB, because they are made in the great state of Texas. (Which makes sense why they’re part of our Texas heritage.) State Fair corn dogs are a great source of protein, nothing is more classic at TexFest than a corn dog, and this recipe packs on the Texas theme.

We love this dish because the flavors are really well rounded. The corn dog batter brings in a sweet element because it uses real honey, and it is offset by the savory chili, spicy jalapeños, and salty cheese. The onions and crushed Fritos give each bite the right amount of texture too! When serving this dish and hosting your Texas-themed meal, here are a few design ideas to take your table setting to the next level:

  • Use a cowboy boot as a centerpiece! Simply place a thin vase in the boot and fill with fresh flowers, like these bright sunflowers!

  • Change up your normal silverware with some rustic, flat black cutlery.

  • Leverage old horseshoes for an on-theme napkin ring!

  • Consider buying some cowhide print ottomans to add some simply adorable, additional table seating.

Texan Frito Pie feat. State Fair Corn Dogs

Serves 4

Prep time:10 minutes

Cook time: 20 minutes

Total time: 30 minutes

Ingredients:

  • 4 State Fair Corn Dogs

  • 1 cup of chili with beans (homemade or canned)

  • 20 Sliced pickled jalapeños

  • 1/3 cup shredded cheddar cheese

  • 1/4 cup chopped white onions

  • 2-3 handfuls of corn chips, crushed

  • Sour cream, if desired, for a dipping sauce

Start by cooking your State Fair corn dogs. We baked them for 18-20 minutes at 375 degrees, in order to give them a perfectly crispy exterior. While the corn dogs are baking, heat up your chili in a saucepan on the stove or in a bowl in the microwave, if you choose. Finely chop your white onion.

Once your State Fair Corn Dogs are cooked, top each of them with a spoonful or two of chili. Sprinkle them with the shredded cheddar cheese while the chili is extra hot so it becomes nice and melty. Finally, add your jalapenos, onions and crushed Fritos to the top.
