Buffalo Chicken Grilled Cheese

We came up with this concoction last September, snapped a photo and casually posted it on social media, and people went CRAZY over it. Knowing how much people liked the photo, we can’t believe it took us THIS long to officially add the recipe to our website – sorry y’all!

What’s terrific about this recipe is that it is filling, and meaty, and obviously doesn’t skimp on the cheese. You can also customize the spice level based on how much heat you can handle. As major buffalo wing fanatics (I mean, Gavin even throws a Wing Festival every year!) there is no surprise that we would come up with this spin on a classic sandwich.

Buffalo Chicken Grilled Cheese Sandwich Recipe

Serves 4

Ingredients:

  • 8 Slices of the bread of your choice
  • 4 tablespoons butter, softened
  • 8 slices of pepperjack cheese – the more the merrier, right?
  • 1/3 cup hot sauce
  • 1/3 cup ranch dressing
  • 2 oz. of cream cheese
  • 1 ½ cups of shredded chicken

In a medium-low skillet, add the hot sauce, ranch, cream cheese, and chicken. Stir to combine and cook until heated through roughly 3-5 minutes. Remove from heat and set aside.

Heat a clean skillet to medium-high heat. Spread the softened butter on each slice of bread. Place as many pieces of bread that will fit in the pan, butter-side down. Top them with a slice of cheese, a scoopful of the buffalo mixture, another piece of cheese. Grill until light brown, then use a spatula to carefully flip the sandwich and grill the other side until golden brown.
