Blue Cheese and Steak Pizza Recipe

Steak and pizza bring us so much joy, so of course steak pizza makes us extra ecstatic.

Now more than ever, a meal that brings you happiness should be something to be celebrated.

We are living in such an odd time right now. A pandemic, murder hornets and now a meat shortage in many grocery stores?!?

This all got us thinking about the best way to stretch your protein.

An economical way to make your meat go further is by nestling your meat in a tortilla, putting it in a soup, adding pasta with your meat, or topping it on pizza.

Thus, that is when inspiration struck for our black and blue pizza!

While most people think steak on pizza equates to a Philly cheese steak pizza, we kicked the flavor up a notch with this blue cheese and steak combo.

This steak and cheese pizza is a delicious way to bring the steakhouse experience to your family, all while using only one steak filet!

This pizza recipe can be used with any cut of steak and you don’t need a massive amount of steak for the recipe.

For instance, we had a beautiful New York strip steak from our monthly shipment from Omaha Steaks. It was large enough to make two blue cheese and steak pizzas. 

If you have a small filet mignon to cook, one steak should be the right size for a single pizza.

Let’s talk steak pizza, baby!

We’re huge homemade pizza fanatics. We cook homemade pizza in the oven as well as on our barbecue grill at home.

We recently added the addition of an Ooni pizza oven to our patio.

We always dreamed of having a brick oven pizza maker, but being city dwellers meant we have a cozy and quaint backyard.

This portable pizza oven was perfect for us as it is not oversized and the legs fold for easy storage. The countertop pizza oven fits great on the outdoor serving station we refinished last year.

Simply attach a propane tank to the pizza oven (we just swap out the tank attached to our gas grill when we use it). 

We have even brought it to a friend’s beach house while vacationing. So easy!

The results from the backyard pizza oven are incredible as the Ooni cooks pizza at a scorching 900 degrees, meaning you have neopolition style pizza in mere minutes!

Pizza dough strategies

For this recipe, you may prefer to make your own pizza dough or pick it up from the market.

Since so many restaurants are struggling as a result of the pandemic, we have opted to call our local Italian joint and ask to buy balls of dough from them instead. 

The quality of the pizza dough was incredible and it felt good to help out a local business during this crazy time.

Consider asking your local pizza shop if they’ll do the same for you!

Ok, but what about the beef?!

We are very persnickety about not overcooking our steak.

Our freezer is always stocked with Omaha Steaks and every steak is trimmed to perfection and aged for at least 21 days. 

It would break our hearts to overcook those beauties.

Typically we like to sous vide steak to ensure it is always perfectly cooked.

In this instance, we just gave the steak a super quick sear, let it rest for about 10 minutes while the crust and the cheese cooked in our pizza oven.

After letting the steak rest, you have the green light to slice the meat. You’ll simply finish the pizza only for a minute or two with the steak and blue cheese on top. 

This warms up the steak, melts the blue cheese, and you don’t risk overcooking the steak on your homemade pizza. 

Let’s start cooking!

Blue Cheese and Steak Pizza Recipe 

Makes 1 pizza

Ingredients:

  • 1 pizza dough ball
  • 1 tbsp oil, preferably grapeseed oil for its high smoke point
  • 1 small steak, seared and sliced
  • 1 cup mozzarella cheese
  • 1 tsp olive oil
  • 1 tsp minced garlic 
  • 3 tbsp blue cheese crumbles
  • 4 chopped chives, for garnish
  1. Preheat your oven. In our home pizza oven we cooked the pizza at a scorching 850 degrees F. If you are using a traditional oven, turn the temperature to 500 degrees F with a pizza stone for the oven during the preheating process.
  2. Start by seasoning your steak with salt and pepper while your grill or your pan filled with 1 tbsp grapeseed oil gets screaming hot.
  3. Sear your steak for 1-2 minutes per side, careful not to fully cook your filet. If you’re cooking your pizza in a traditional oven, you may choose to complete this step while the pizza is baking.
  4. Remove the steak from the heat to rest.
  5. Stretch out your pizza dough, dusting it with flour.
  6. Brush the pizza crust with olive oil and garlic using a pastry brush.
  7. Add your mozzarella cheese.
  8. Cook your pizza until it’s almost fully cooked. In our pizza oven this took only about 90 seconds. In a traditional oven the cook time will be closer to 10-16 minutes, but depending on your dough it could take closer to 20 minutes, so keep an eye on your pie!
  9. Remove your pizza from the oven and top with sliced steak and blue cheese crumbles.
  10. Return the pizza to the oven for another 1-2 minutes until the blue cheese starts to melt.
  11. Remove your pizza from the oven, season your pizza with salt and pepper and sprinkle with chopped chives.
  12. Slice and serve!

Looking for a fun twist? Try these variations:

  • Horseradish – Spice things up by spreading horseradish cream on the crust alongside the olive oil and garlic.
  • Potato – Add sliced potato on top of the mozzarella when you cook the pizza.
