The Ultimate Ice Cream Sundae Recipe: Caramel Apple Sundae

Guys, we are SO excited about our newest recipe. We were planning on making a totally different dessert recipe this weekend. When we realized the ice cream flavor that we were originally looking for was sold out, we punted and ended up creating a masterpiece. Don’t you just love when something doesn’t go your way, but ends up being a blessing?!?

We have been a bit obsessed with creating fall recipes this week (if you haven’t scoped out our pumpkin spice rum cakes or our sweet tea hot toddy, you’re missing out). For this recipe, we stepped away from the pumpkin spice and hit up the produce aisle for some seasonal apples.

Caramel apples are delish, but let’s get real, they are a major pain in the butt to eat. They are sticky, large and half of the time you end up with caramel on your nose and watery sugar dripping down your arm. After your first five bites, you’ve slobbered off all of the caramel and left with a plain ‘ol apple – not the most optimal dessert.

We took all of the best flavors of a caramel apple and made it into a much easier to eat sundae! Snoqualmie’s Salty Caramel ice cream was the perfect base for the sundae because this organic ice cream is a delicious salted caramel ice cream with decadent ribbons of caramel swirls. The sundae features slices of juicy green apples. Since they are sliced, they are much easier to eat than a traditional caramel apple. We even like to dip them into the sundae like a spoon. Our local grocer, Central Market, even had caramel apple cookies in their bakery, which we used in this sundae recipe. If your market doesn’t carry anything like that, we recommend using some soft snickerdoodles, oatmeal, or gingerbread cookies. Finally, we also topped off the sundae with more caramel, chopped pecans, whipped cream and even a cute cinnamon stick for a fun garnish.

Caramel Apple Sundae

Serves 2

Ingredients:

  • 1 pint Salted Caramel Snoqulmie Organic Ice Cream

  • 1 green apple, sliced into 1/8’’ pieces, lengthwise

  • 1 caramel apple cookie (feel free to sub for snickerdoodle, gingerbread or oatmeal)

  • Chopped pecans

  • Caramel sauce

  • Cinnamon sticks

  • Whipped cream

Start slicing your apples. You want to make sure you have all of your ice cream sundae ingredients in place before you start building your dessert or you will quickly have a melty mess! If you have a mandolin, this will make prepping your green apple slices a breeze! Just set it to the thickest setting and slice your apple on both sides, avoiding the core. You can buy a mandolin for pretty cheap online and use it for a lot of your cooking prep. Here is one similar to ours. If you don’t have that kitchen gadget, feel free to use a knife to make your slices, about 1/8” thick.

To build your sundae, start adding a few pecans to the bottom of a parfait glass and top it with some caramel sauce. Then scoop half of the pint of ice cream into your parfait glass. Wedge your apple slices around the top of your sundae. Break your cookie in half and stick it on the top of the ice cream, along with the cinnamon stick. Drizzle some additional caramel on top and sprinkle with some additional nuts. Feel free to also add some whipped cream to top it all off.

We think this is our new favorite fall dessert! It’s so good in fact, that we are going to make this year-round (when you live in Texas, ice cream is always essential!)
