Blue Oyster Mushrooms have a chewy texture that doesn’t lose shape when cooked with liquid, woody and sweet flavor.

Bring water, rice vinegar, sugar, and salt to a boil in a small saucepan.

Remove the vinegar mixture from heat and pour on top of your sliced carrots, cucumbers, and radishes and let it sit.
