Galway Oyster Festival: A Celebration of Ireland’s Finest Seafood

Sharing is caring!

If there is one event that captures the spirit of Ireland’s west coast, it is the Galway International Oyster & Seafood Festival.

Combining world-class seafood, lively Irish pubs, traditional music, street celebrations, and a healthy dose of friendly competition, this much-loved annual event is a must for food lovers visiting Galway City.

In fact, it was recently ranked as the best European food festival, even beating our Munich’s Oktoberfest celebration.

We’re huge fans of oysters and after our first trip to Ireland and tasting the Irish native oyster, we knewwe wanted to return to Ireland for this festival.

Recognized as the world’s longest-running oyster festival, the Galway International Oyster & Seafood Festival began in 1954 and has grown into one of Ireland’s most distinctive food celebrations. Plus, it’s free entry into the fest!

The festival brings locals and visitors together to celebrate Galway Bay’s oyster heritage, maritime traditions, and fantastic food scene.

Whether you are an oyster aficionado or someone who simply enjoys discovering new culinary experiences, this is a multi day event that shouldn’t be missed.

From exploring oyster farms along the Wild Atlantic Way to following the Oyster Trail through local restaurants and pubs, this seafood festival offers a delicious way to experience Galway’s vibrant culture.

Why Irish Oysters Are Some of the Most Premium in the World

Ireland has earned an international reputation for exceptional oysters, and Galway Bay is one of the country’s most celebrated oyster-producing regions.

The secret lies in the combination of clean Atlantic waters, natural coastal conditions, traditional farming expertise, and a rich history of oyster cultivation.

The waters surrounding the west of Ireland provide an ideal environment for oysters to grow. Nutrient-rich seawater supplies the plankton oysters feed on, while the changing tides and coastal environment influence their texture and flavour.

Much like wine reflects the place where its grapes are grown, oysters develop distinctive characteristics from their surroundings. Oyster lovers sometimes describe this sense of place as terroir.

Galway is particularly associated with the Native Irish Flat Oyster, a prized species with a long connection to the region.

Native oysters are known for their distinctive appearance, complex flavour, and seasonal availability.

Their taste can be briny, mineral-rich, and pleasantly savoury, with subtle variations depending on where they are harvested. Honestly, we think they’re the best oysters we’ve ever tasted.

Giga oysters, another popular variety served throughout Ireland, offer a different experience, often with a plump texture and a fresh, clean flavour.

Sampling both varieties is a wonderful way to appreciate the diversity of Irish oysters. These are more similar to the oysters that you’d find in the United States.

The Galway oyster tradition stretches back generations, with local oyster farmers continuing to combine established knowledge with modern aquaculture practices.

The Galway International Oyster & Seafood Festival celebrates this heritage while introducing visitors to the people and processes behind the produce.

For festival goers, there is no better opportunity to taste some of the finest seafood in Ireland (and the world).

Enjoy oysters freshly shucked and served simply, or discover creative preparations and drinks pairings at participating restaurants. We learned that adding Irish gin into your oyster really compliments the flavor profile of the seafood.

Either way, your taste buds are in for a treat.

For a deeper understanding of Galway’s oyster culture, a visit to an oyster farm is an unforgettable experience.

The Kelly Oyster Tour during the festival offers visitors the chance to discover the journey from oyster farm to plate while meeting the people who have helped preserve this important local tradition.

The Kelly family has been farming oysters in Galway Bay for three generations, with a history dating back to 1954. Their connection to the Galway oyster industry is especially significant because the family’s story is intertwined with the origins of the festival itself.

During the guided experience, visitors can learn about oyster farming from a third-generation oyster farmer, hear stories about the local fishing community, and discover what makes Galway Bay such a special environment for oyster cultivation.

The experience also includes an oyster tasting and a shucking demonstration, giving guests a closer look at the skill involved in preparing oysters for the table.

We enjoyed fresh Native oysters right from the bay, paired with a few beers from a local brewery. Talk about fresh!

Beyond tasting the oysters, a farm tour provides insight into the challenges of producing seafood responsibly while working with the natural environment.

Weather, tides, and growing conditions all play a part in bringing oysters to market.

Kelly Oysters are the official oyster providers for the Galway Oyster Festival and shucking competition, so seeing the farm tour is the perfect way to kick off your oyster festival experience.  If you’re lucky like we were you may be on the tour with some of the international competitors.

What Is the Oyster Trail?

If you want to sample your way around Galway, the Oyster Trail is one of the most enjoyable parts of the Galway International Oyster & Seafood Festival.

Rather than staying in one venue for the entire celebration, visitors can explore the city’s neighborhood bars and restaurants to discover different oyster dishes, seafood specials, and drink pairings.

The Oyster Trail brings the festival into the heart of Galway’s social scene.

Local restaurants and pubs showcase their own take on oysters, while visiting international shucking competitors demonstrate their shucking skills at selected venues.

It is a fantastic opportunity to meet the people behind the festival, sample regional ingredients, and experience Galway’s legendary hospitality.

In the Latin Quarter, historic pubs and lively restaurants provide a memorable backdrop for oyster tasting. Quay Street and the surrounding streets are particularly appealing for visitors who want to combine seafood with sightseeing.

You might enjoy freshly shucked oysters with a pint of stout, explore creative oyster preparations, or pair a plate of seafood with a glass of wine.

For those who want to make an evening of it, the Oyster Trail is a wonderful excuse to explore Galway’s local pubs, listen to live music, and discover why the city has such a fantastic food scene.

It also gives visitors a chance to experience Galway beyond the main festival stage.

International Oyster Festival Parade

The Galway International Oyster & Seafood Festival is about much more than food. Its street celebrations bring Irish culture, music, and community spirit into the streets of Galway, creating a vibrant atmosphere that is every bit as memorable as the seafood.

One of the highlights is the Parade of Flags, which takes place on Saturday during the main festival celebrations.

In 2026, the parade traveled from Eyre Square through the streets of Galway toward Cross Street in the Latin Quarter, where the festivities continued around the main competition stage.

The parade celebrates the international nature of the event, welcoming competitors and visitors from around the world. With representatives from numerous countries coming together for the oyster opening championships, it is a colourful reminder that food has a remarkable ability to bring people together.

The parade features a town crier who rings his bell and declares the start of the festival, a marching band, and all the international competitors showcasing their home country proudly with their corresponding flag.

The International Oyster Shucking Championships

The undisputed centrepiece of the Galway International Oyster & Seafood Festival is its famous oyster opening competition.

Watching an experienced shucker open oysters at remarkable speed while maintaining precision and presentation is absolutely thrilling, even if you have never opened an oyster yourself.  We were saying this competition needs to be on ESPN8: The Ocho.

The festival hosts both the Irish Oyster Opening Championship and the international World Oyster Opening Championship, bringing together talented competitors who have spent years perfecting their technique.

The Irish championship gives national competitors the opportunity to compete for the Irish title and a place among the international field.

The Irish Oyster Opening Championship occurred the day before the international championship, at An Púcán, where we enjoyed the competition alongside a perfect pour of Guiness and live music.

The excitement built for Saturday, when competitors from around the world gathered for the Guinness World Oyster Opening Championship, the festival’s internationally recognised headline contest.

During the competition, participants must open their oysters quickly while demonstrating impressive control, accuracy, and consistency.

Speed matters, but so does presentation: a skilled competitor must open the 30 shells cleanly and avoid damaging the delicate oyster inside.

For spectators, the event is an entertaining blend of sporting drama and culinary craftsmanship. The crowd cheers on its favourites as competitors race against the clock, transforming an everyday kitchen skill into a high-stakes performance.

The championship also celebrates the generations of knowledge behind Ireland’s seafood industry.

Oyster shucking is an essential skill for chefs, seafood professionals, and oyster farmers, and the competition provides an opportunity to recognise the expertise involved.

Even if you have never tried an oyster before, the atmosphere surrounding the oyster opening championships is a reason to attend.

We watched the American champion Honor Allen from Dat Cajun Place in Panama City, Florida shuck all the oysters in an impressive 2 minutes and 22 seconds.

Once the oysters are shucked and competitors ring a bell to indicate they’re finished, the oysters are inspected by judges who can add additional seconds as a penalty for oysters that are served or for pieces of shell left in the oyster.

After full judging it was revealed that Martin Söderström from Finland was crowned the victor in the 72nd annual International Oyster Shucking Competition.

He beat out 16 global competitors from Japan to even Tasmania, Australia!

We were proud of Team USA’s Honor Allen who finished in 2nd place, and we know he could take it in years to come.

With live commentary, an enthusiastic international crowd, nearby seafood stalls, and plenty of places to grab a drink, it is one of Galway’s most exciting experiences.

Come for the oysters, stay for the party, and after you’ve had your fair share of Guinness, be sure to enjoy a late night Irish Spice Bag.
