Bacon Taco Shells – The Ultimate Breakfast Taco Recipe

We’re so lucky to have to amazing dads in our lives and to celebrate we’re making up a special Wright® Brand Bacon Texas-inspired breakfast just for them!  Father’s Day is such an important day to thank Dad and to do that we’re partnering with Wright Brand Bacon to make the ultimate breakfast taco.  Texas is so well known for their breakfast tacos, but we’re kicking the standard ones up a notch by lining the tortilla with bacon.  To do this we’re using Wright Brand Bacon’s Naturally Hickory Smoked Bacon flavor because it tastes delicious, and their thick slices are perfect for holding up everything we’re putting in it. Taco Shell Ingredients:

Makes 2 taco shells

  • 24 oz. package of Wright Brand Naturally Hickory Smoked Bacon 
  • Tinfoil/Parchment Paper
  • Baking Sheet

Taco Bar Ingredients:

  • 6 scrambled eggs
  • Pico de gallo
  • Your Dad’s favorite cheese to melt
  • Avocado
  • Cilantro

How do you make a bacon tortilla you may ask?  It’s actually way easier than you could think and it’s also pretty dang creative.  In order to make a bacon tortilla, you need to do a bacon weave.  Before starting getting your “bacon weave on,” pre-heat your oven to 375F, and line a baking sheet with aluminum foil.  Lay out four to five bacon strips side by side horizontal really close together.  Lift up the ends of every other piece, and place a bacon slice vertically.  Straighten out the folded piece and continue this process until it’s fully intertwined.  We imagine this is what basket weaving is like. We baked our bacon for 20 minutes initially.  If you really want to ramp up your presentation, cut it into a circle using an upside-down bowl after those initial 20 minutes of cooking then finalize it for another15-20 minutes in the oven

Once the beautiful bacon tortilla is out of the oven, you can either set-up a breakfast taco bar for your dad or if you’re us, we preferred to surprise him with the whole enchilada (umm… we mean bacon taco).  To make it easier to eat, lay the bacon shell in a flour tortilla. Within our taco we made scrambled eggs, melted cheese, and added salsa, avocado, and fresh cilantro on top.  When making scrambled eggs, or “scrambies” as Karen calls them, we always recommend to lightly salt and pepper them and then cook low and slow.  When you cook eggs low and slow with little movement they come out much more custardy and silky.  Once it was all put together we surprised Gavin’s Dad outside as he was relaxing on his patio overlooking the Texas hill country.  He was so excited and surprised because he loves bacon and breakfast tacos, so this blew his mind.  We were so thankful to partner with Wright Brand Bacon, because we knew Gavin’s dad, James, would be super happy.  Once Karen is back to home in MN, we know what her Dad will be requesting!
