Chocolate covered peanut butter ritz cookies

We have a theory that there are two types of people in the world: salty and sweet. No, we are not talking about attitudes here. We were talking about “dessert people”. When we go out to restaurants, Gavin is always the one to ask for dessert. Karen on the other hand, would opt to eat some savory buffalo wings instead. The type of dessert that Karen loves, is the kind that comes with SALT. Sea salt caramels, chocolate covered pretzels, if it’s salty, Karen is into it.

That is why this chocolate covered peanut butter Ritz cracker recipe is the perfect mix of the two. We dunk them halfway in chocolate to appease us both, if you have a big sweet tooth, go to town and coat the whole darn cookie in chocolate coating.

Ingredients:

  • 1 sleeve of Ritz crackers

  • ½ cup of peanut butter

  • 3 tablespoons of powdered sugar

  • 1 ½ cups of semi-sweet chocolate chips

  • 3 tablespoons vegetable shortening

  • Super fun toppings of your choice: Sprinkles, Candy Canes, etc.

Mix your peanut butter and powdered sugar together. This is the filling for your peanut butter patties. Start to spoon teaspoons of the mixture on a Ritz cracker and top it with an additional cracker. Prep all the sandwiches at once. Now, start to make your chocolate coating. In order to avoid burning the chocolate, create a double burner. A double burner is a method of indirect heat. Start by boiling about an inch of water into a saucepan, and top it with another bowl or pan that fits inside. The interior pan should not touch the water. Once the water boils, add the chocolate chips and vegetable shortening to the top vessel. Stir constantly until well combined and melted. Remove from heat and dip the peanut butter Ritz sandwiches into the chocolate. Sprinkle with toppings and let you chocolate coated cookies cool for at least an hour.

We think this is a really easy no-bake Christmas cookie recipe, but it is so good that you could make them any time of the year!
