The temperatures are dropping which means it’s time to make all the cozy meals, including our classic chili recipe.

This is Karen’s mom’s recipe that has been altered slightly through the years.

We’d call it a classic midwestern chili recipe.

Chili

When a friend of ours, who is from Texas, asked for our chili recipe we provided them this recipe and realized we didn’t have the chili recipe posted to our blog.

First he asked, “No beef broth?!?”. Nope.

Then “You add in all the juices from the canned tomato?!?” Yup.

We told him to trust us. 

This wasn’t a Texas chili, it was a hearty, bean-filled Minnesota recipe.

After it was all said and done, he loved the recipe. Especially topped with some fritos, as Texans do.

We also love adding a scoop of this classic chili on top of a perfectly fluffy baked potato (we always make air fryer baked potatoes)! Or try it with a side of our Southern Corn Pudding Recipe, Bisquick cheddar biscuits, homemade Italian Bread, or as the main star to a chili bar.

Chili Baked Potato

Classic Chili Recipe

Prep Time: 5 Minutes

Cook Time: 70 Minutes

Serves 8

  • 1 tablespoon of olive oil
  • 1 small yellow onion, diced
  • 1 jalapeno, minced
  • 1 clove of garlic, minced
  • 1 pound of ground beef
  • 1 can of chili hot beans, liquid included
  • 1 large can of diced tomatoes, liquid included
  • 2 tablespoons of chili powder
  • 2 bay leaves
  • Salt and pepper to taste
  1. Heat the olive oil in a large pot or Dutch oven. Then add the onion, cooking until softened.
  2. Next add the minced jalapeño and sauté for 2-3 minutes.
  3. Finally add the garlic and sauté for another minute.
  4. Add the ground beef to the pan and cook until no longer pink, stirring and mixing the meat with the onions and jalapeño.
  5. Add the beans and tomatoes, including the juices, to the pot.
  6. Add chili powder, bay leaves, and salt and pepper. Stir to combine.
  7. Simmer on low for one hour. 
  8. Remove the bay leaves before serving. Top with cheese, sour cream, Fritos or saltine crackers.

Total Time: 1 hour 15 minutes

An easy, classic chili loaded with beef, beans, and just the right amount of heat.

Ingredients

  • 1 tablespoon of olive oil

  • 1 pound of ground beef
  • 1 can of chili hot beans, liquid included
  • 1 large can of diced tomatoes, liquid included
