A few years back Karen took her leftover ham from the holidays to create this stupid easy healthy reuben soup recipe.
We’ve been meaning to share this recipe for years, but it’s not as photogenic as most of our other dishes so it was always put on the back burner.
Well, we finally got around to publishing this incredible reuben soup recipe.
At 90 calories per bowl it’s low calorie, zero carb, and supports good gut health.
Talk about a win, win, win heading into the new year (and heading into our upcoming wedding!)
The Perfect Leftover Ham Soup Recipe
Almost every holiday we love to make Karen’s grandma’s ham with ham gravy recipe.
The sweet ham gravy sauce is perfect to keep the ham moist and is incredible on mashed potatoes.
But after a few days of leftover ham sandwiches, we always still end up with extra ham.
Wondering what to do with your leftover ham? Make this healthy reuben soup recipe!
It’s a nice change from ham and cheese omelettes and ham sandwiches. Plus, it is very low calorie which is a nice change after heavy, holiday eating.
This recipe is also a keto soup and a gluten free soup! Check out these other recipes for leftover spiral ham too.
An Easy, 4 Ingredient Soup
What makes this reuben soup amazing is the fact that it is so damn easy.
Karen dreamed this up years ago by throwing a few pantry staples into a pot and viola!
A warm and comforting soup that tastes just like a reuben sandwich without the bread.
Hey, if you’re on a carb kick, dip some rye bread in the soup and call it a deconstructed sandwich.
