Slow Cooker Coca Cola Pulled Pork

There is something about the holiday season that always causes us to pull out the slow cooker.

Maybe it is because we love to have the house smell like a home cooked meal for hours; maybe it is because it is easier to feed a crowd by breaking out your crockpot.

Either way, we were excited to do some slow cooking when having family over for dinner the other day.

We opted to make pulled pork because it is super versatile.

We made pulled pork sandwiches on Sunday, used leftovers for pulled pork tacos on Monday, and also finished them off on Tuesday by adding the meat to a rice bowl. All were delicious!

Our Coca Cola Pulled Pork recipe is a cinch! It does not require many ingredients and the slow cooker does most of the work.

Ingredients:

  • 1 large pork shoulder
  • Salt and pepper
  • 1 tablespoon onion powder
  • 2 tablespoons vegetable oil
  • 1 bottle of BBQ sauce
  • 12 oz. bottle of Coca Cola

Start by seasoning your pork shoulder generously with onion powder, salt and pepper. Now heat up the vegetable oil in a large skillet or dutch oven. When the oil starts to ripple, add the pork. The goal of this step is the sear the outsides of the meat. Once one side has a nice sear, rotate the meat to the other sides. This will help to keep the juices inside the meat while it slow cooks and will help to provide additional texture: a win/win.

Once your meat has a nice sear all around, add the barbecue sauce and the Coke to the slow cooker and use a whisk to combine them. We always use our family’s super secret homemade BBQ sauce recipe, but feel free to use any sauce of your choosing. Now you can go ahead and transfer the pork to your crockpot.

Cook on high for 6-8 hours, until the pork easily falls apart with a fork. When it is ready, use 2 forks to shred the meat while it is in the slow cooker, mixing to combine with the sauce.

Serve your meat as you please, but we definitely recommend popping it on a roll with fresh red onion, topped with crunchy coleslaw. Enjoy the meat and get creative with the leftovers you have!
