This no boil  lasagna recipe with cottage cheese is a longgg time coming. 

Coming from Karen’s mom’s kitchen, her recipe ALWAYS gets raving reviews.

In fact, it’s probably Gavin’s favorite dish to nosh.

This dish is a beef lasagna recipe that eats like a cheese lasagna recipe because there is SO MUCH CHEESE added.

This recipe is unlike any other homemade lasagna recipe that you’ve tasted because of the homemade sauce, no boil noodle method, the swap of cottage cheese instead of ricotta, and lots and lots of monterey jack cheese.

The reason why this lasagna is so special is because even the sauce is homemade.

Once you brown your ground beef and mix in your spices and tomato puree, let the flavor come together by reducing the sauce.

It’s as easy as simmering the mixture on low for about an hour.

Ok, here is the trick to this amazing lasagna that EVERYONE raves about.

Don’t boil your noodles beforehand.

Yes, you heard that right. Just put regular ‘ol hard lasagna noodles into the layers when you’re building the lasagna.

The cottage cheese mixture and the sauce end up cooking the noodles when it bakes for 40 minutes.

You’ll end up with perfect al dente noodles with just the right amount of texture instead of a mushy mess that you might find with some other beef lasagna recipes.

We make this amazing homemade lasagna recipe not with ricotta, but with cottage cheese.

The cottage cheese is mixed with parmesan cheese and eggs which creates a more custardy layer compared to using ricotta.

The addition of egg really helps to bind the layers together.

Which cheese is best for lasagna 

The other part of this recipe that is really unique, is that you won’t reach for traditional mozzarella for the cheese layer.

Our homemade lasagna recipe uses monterey jack cheese.

Yeah, this might seem super untraditional, but trust us, it’s incredible.

The monterey jack cheese provides the perfect amount of flavor compared to the milder option of using mozzarella.

It can be difficult to find shredded monterrey jack cheese at some grocers.

If this is the case, just buy a block of cheese and shred it the old fashioned way, with a grater box.

How to layer lasagna

When it comes to the all important lasagna layer order, we start with a pan that’s been coated in olive oil spray.

Then start by adding the (non boiled) lasagna noodles.

Use half of the cottage cheese mixture for the second layer.

Next, spoon half of the homemade lasagna sauce on top.

Follow that by 2 cups of shredded  monterey jack cheese.

Then repeat the process once more, until eight layers have been established, two layers of each filling.

No Boil Lasagna Recipe

Prep Time: 80 Minutes

Bake Time: 40 Minutes

Ingredients:

  • 1 pound of ground beef (we use 80/20 meat to fat ratio)
  • 2 (15oz.) cans of tomato puree sauce
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 24 oz. of cottage cheese (we use low fat 1% cottage cheese)
  • 2 eggs
  • ½ cup of parmesan cheese (grated or shredded are both fine)
  • 6-8 lasagna noodles, uncooked
  • 4 cups of shredded monterey jack cheese (2 packages)

Instructions:

  1. Brown the ground beef in a saucepan.
  2. Once brown, add the minced garlic and cook for 1-2 minutes.
  3. Add the italian seasoning, parsley, basil, and tomato puree to the pan and mix well.
  4. Simmer the homemade lasagna sauce on low from 1 hour.
  5. In a bowl beat the 2 eggs, then add the cottage cheese, salt, pepper, and paremen cheese.
  6. Preheat your oven to 375 degrees and spray a recangular casserole pan with nonstick cooking spray.
  7. Place a layer of uncooked lasagna noodles on the bottom of the dish.
  8. Top with half of the cottage cheese mixture.
  9. Add a layer of half of the homemade lasagna sauce.
  10. Top with 2 cups of the monterey jack cheese.
  11. Repeat this process with another layer of noodles, cottage cheese mixture, sauce, and the remaining 2 cups of shredded cheese.
  12. Bake the lasagna for 40 minutes, uncovered.
  13. Enjoy! (Psst.. the leftovers are even better the next day.)
