We’re loving our newest chocolate obsession, mini brownie bites with a dark chocolate twist!
The brownie bites are made with traditional cocoa powder but are filled with a hidden surprise of dark chocolate chips!
We noticed our site’s dessert section was filled with cookies, fruit crisps and pies but were seriously lacking something for the chocoholics!
While setting up a hot cocoa bar with our crockpot hot chocolate, we whipped up these brownie bites and they were irresistible!

Mini brownie bites
Mini brownies are perfect, portion controlled morsels. We like to make these and pair one with a nice rich, glass of red wine.
In order to make this recipe for mini muffin brownies you’ll need a mini muffin pan.
Note: if you do not have a mini muffin pan, you can make this in a regular cupcake pan, just increase the cook time and cook until a toothpick is removed cleanly.
We think these brownie bites are delicious plain, but you can also add a drizzle of chocolate if you’d like. Simply melt some extra dark chocolate chips with a half a teaspoon of coconut oil and microwave for 1-2 minutes, stopping every 30 seconds to stir until smooth.

Dark Chocolate Brownies
We took a traditional brownie recipe and turned them into dark chocolate brownies by adding some dark chocolate chips to the batter.
We reached for Ghirardelli dark chocolate chips in order to ensure it was a well balanced Ghirardelli dark chocolate brownie mix.
This dark chocolate brownie recipe isn’t too sweet, which makes it a perfect complement to an ice cream sundae or to a hot cocoa bar.

Brownie Bites Recipe:
Prep time: 5 minutes
Bake time: 15 minutes
Makes ~18 brownie bites
- 10 tablespoons unsalted butter,softened
- 1 1/2 cups white sugar
- 3/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 2 large eggs
- 1/2 cup all purpose flour
- 1/2 cup Ghirardelli 72% Dark Chocolate Chips
- Preheat your oven to 350 degrees.
- Use a mixer to cream the butter and sugar together.
- Add the cocoa powder, salt, vanilla extract, eggs, and flour, mix until combined.
- Finally, gently fold in the dark chocolate chips to the batter. The batter will be dense, similar to mashed potatoes, it is not loose like a cake batter.
- Scoop the dark chocolate brownie mix into greased mini muffin pans and bake at 350 degrees for 15-17 mins until the tops spring back to the touch.
- Let cool prior to frosting, glazing, or serving.
