The bright acidity adds another layer of flavor to your favorite dishes.
This is far and away our favorite easy condiment to make at home, and we always have a fresh batch in our fridge.
We typically don’t write recipes this simple, but we’ve been getting requests long enough for this recipe we thought it was a must add for our followers for whenever they request it.

How to pickle red onions
Our pickled red onion recipe couldn’t be easier.
Simply bring your pickling liquid to a boil then pour the mixture on your sliced onions.
Your pickled onions will be soft in no time!

Quick pickled onions
In as little as an hour your pickled red onions will be ready.
They taste great right away, but after a day in the pickling liquid they get even better.

Pickled White Onions
No red onion on hand? This recipe can also be made with white onions the exact same way. Read more about quick pickled white onions.
If you’re into pickled radishes (try them on your tacos!) you can also make them using the same recipe.
You can also make quickles right in the fridge or even pickle other veggies like pickled serrano peppers, Pickled Green Tomatoes, or Pickled Beets.

Pickled onions for tacos are one of our favorite ways to use this recipe.

How long do pickled onions last?
We put these onions on everything, so they never last long.
But, if you don’t eat them as fast as we do you can keep them covered and refrigerated in your fridge for 2 to 3 weeks.
It’s best to store them in an airtight container in the refrigerator.

Pickled Red Onion Recipe
- 1 small red onion, sliced
- ½ cup white vinegar
- ½ cup water
- ½ teaspoon sugar
- ¼ teaspoon salt
- 1 teaspoon black peppercorns (optional)
- Add your sliced red onion and black peppercorns to a mason jar or a bowl.
- In a small sauce pot, mix together the water, vinegar, sugar, and salt. Bring it to a simmer, then immediately remove it from heat.
- Add the liquid to the jar or bowl.
- Your pickled onions will be ready in an hour, but will continue to soften as they continue to pickle in the liquid.
