Smoked Salmon Flatbread

It’s Sunday morning and our started with sleeping in, going for a walk around our neighborhood, and making these quick and easy smoked salmon flatbread breakfast pizzas. We were inspired by a café we stopped at during our trip to Hot Springs last month. Their flatbread pizza featured kale pesto, and egg, and tons of avocado. We peeked at what we had lying around our kitchen and came up with this flavorful brunch recipe.

This recipe reminds us of a bagel and lox crossed with avocado toast. Everyone’s brunch dream! We’re not sure if this is more of a salmon pizza or avocado pizza but you can’t go wrong, regardless. We have a fantastic recipe for homemade naan bread, but in this case, we just used store bought since we were feeling lazy. Next time we are going to plan ahead and make the homemade naan the night before to take this breakfast recipe to the next level. Heck, even though we classify this as a brunch recipe it would be great for an elevated, quick lunch or a smoked salmon appetizer that would be a great addition to a wine and cheese night.

Smoked Salmon and Avocado Pizza

Makes 2 Pizzas, Serves 4

Start by preheating your oven to 350 degrees. Add your flatbread to the oven for 3-7 minutes to soften up the bread and get a slight toast to the edges. The time will vary on the thickness of your bread so watch it carefully. While the bread is toasting, mix together the cream cheese, yogurt, lemon juice, and feta in a medium mixing bowl. Season the mixture with some salt and pepper and stir until all ingredients are well combined.

Once the bread is done, remove it from the oven and let it cool for a few minutes before spreading the mixture on the top – you don’t want your cream cheese to be a melty mess.  Once it has cooled and you have spread half of the yogurt mixture on top, sprinkle it with sliced scallions. Next, arrange 2 oz. of smoked salmon on top of that layer. We LOVE the pastrami smoked salmon at Trader Joe’s. It is our go-to smoked salmon and it is somewhat affordable. Now add half of the sliced avocado. We made a cute little avocado rose but feel free to arrange your avocado however you see fit. Finish your flatbread by grating some lemon zest to the top along with some salt and pepper. Do the exact same thing for your other flatbread. Ta da! Your flatbread is complete in no time and it looks like a masterpiece.
