What are Brats in a Blanket?

Brats in a blanket are a heartier version of pigs in a blanket made with bratwurst sausages instead of hot dogs. 

Each bratwurst piece is wrapped in dough (aka wrapped brats or wrapped sausage) and baked in a preheated oven until the dough is fluffy and perfectly golden brown.

We add in a bit of sauerkraut and cheese so every bite is loaded with flavor.

It’s an elevated take on a nostalgic childhood comfort food.

How are Brats in a Blanket Different from Pigs in a Blanket?

The main difference is the sausage. 

Traditional pigs in a blanket use hot dogs, while brats in a blanket use flavorful sausages like bratwurst (you could even use a polish sausage or even andouille sausage, if you’d like.)

Bratwurst has a richer, juicier texture and pairs perfectly with toppings like sauerkraut, cheese, and Mustard-based dips like yellow mustard or dijon mustard.

We use Omaha Steaks gourmet bratwursts, since they are fully cooked already, they are already ready to wrap and bake!

Basically, brats in a blanket feel more “grown up” and indulgent.

What Type of Dough to Use for Brats in a Blanket?

For this recipe, we’re using pizza dough, which gives the best balance of chewiness and crisp edges. 

It tastes more similar to the authentic rolls you’ll find at sausage stands in Germany.

Roll it out on a lightly floured surface.

That being said, you can absolutely swap pizza dough for puff pastry or crescent roll dough if you prefer. 

However, the brats in a blanket will be sweeter and more flaky if you substitute for those doughs.

No matter which you choose, the goal is to fully lay bratwurst pieces in the center of the dough strips, top with kraut and cheese and wrap tightly so nothing leaks while baking.

Brats in a Blanket Dipping Sauce Options

Dips are where you can really customize the flavor. From sweet to spicy to tangy, the options are endless.

Recipe for Brats in a Blanket

Prep Time: 15 Minutes

Cook Time: 13 Minutes

Serves: 32 Brats in a Blanket

Ingredients:

  • 8 fully-cooked bratwurst sausages, sliced in quarters
  • ¼ cup sauerkraut
  • ¼ cup gruyere cheese
  • 1 package of pizza dough
  • 2 tablespoons melted butter
  • 2 tablespoons everything bagel seasoning 
  • Dipping sauces of your choice

Directions:

  1. Preheat your oven to 400° F.
  2. Line a prepared baking sheet with parchment paper or use a cookie sheet with cooking spray.
  3. If using a pack of brats that are not already fully cooked, be sure to boil in a pot of water (you may want to also add in some reserved beer for beer brats) so that they are fully cooked prior to rolling in dough. 
  4. Use a sharp knife to cut your fully-cooked sausages into quarters. 
  5. Roll out your pizza dough on a lightly floured surface with a rolling pin.
  6. With a pizza cutter, cut the dough into thirds the short way, then 11 strips the long way.
  7. Place a sprinkle of shredded cheese and sauerkraut in the middle of each strip. Add one bratwurst piece on each strip and roll the dough around it to form a wrapped sausage.
  8. Place each piece seam-side down on the baking sheet, leaving a few inches of space between each piece.
  9. Bake for 8 minutes.
  10. Remove from the oven, brush with melted butter (you could also use an egg wash for shine), and sprinkle with bagel seasoning.
  11. Return to the oven and bake for another 5 minutes, or until the dough is fully cooked, fluffy, and golden brown.
  12. Serve hot with beer cheese, spicy mustard, or dijon mustard.
