Our Hatch Chile chili packs in a punch of flavor for this classic recipe that will please a crowd.
It’s perfect for hosting a group for the big game (we’re adding it to our list of 120+ Super Bowl Appetizers), at a tailgate inside mini Frito chip bags, or even for an easy potluck idea.

What is a Frito Pie?
A Frito pie is a staple in Texas.
Often served during game day, tailgates, or a superbowl party, this is a great dish to make ahead to serve a crowd.
Often referred to as a walking taco, Fritos corn chips are smothered in Texas chili, then topped with garnishes like cheese, green onions, cilantro, pico de gallo, hot sauce, or jalapeños.
When prepared for a group, you can use a snack-sized sack of Frito chips.
Growing up in the Midwest, typically our chili is made with kidney or pinto beans, as we do for our Classic Chili Recipe.

However, any Texan will argue that beans do not belong in chili.
Thus for this recipe (and after a decade living in Texas), we’ve prepared this chili recipe without beans.

What are Hatch Chiles?
Living in the South, hatch Chile season is a cause for celebration.
Markets feature all sorts of hatch Chile products (even in desserts!) and also roast the peppers fresh, in bulk, outside the store.
Hatch chiles come from a small region in New Mexico.
You can use hatch chiles in soups, baked goods, salsa verde, and anything recipe where you’re looking to add a kick of flavor.

When are Hatch Chiles in Season?
You can start seeing hatch chiles in stores starting in August.
The season runs through November but here in Texas they sell fast, be sure to get your hands on them before the season is over.

How to Prepare Fresh Hatch Chiles
Don’t feel overwhelmed by preparing fresh hatch chiles for this green chile Frito pie.
All you need to do is roast the peppers, place the hot peppers in a plastic sealed bag for 20 minutes, then remove them and easily peel the skin off.
There are a number of ways to roast your hatch chiles:
- Grill: Heat your grill to medium high heat and place the chiles directly over the flame. After a few minutes once you start to see the skin char, flip the peppers to sear the other side, then remove from the grill.
- Sear: On a gas burner, set the flame to medium heat and place the chiles directly over the flame. After a few minutes once you start to see the skin char, flip the peppers to sear the other side, then remove from the burner.
- Broil: Pre-heat your broiler to high. Place the chiles on a baking sheet or large baking dish and place under the broiler. After a minute or so, once you start to see the skin char, flip the peppers to sear the other side, then remove from the oven.

Substitution for Fresh Hatch Chiles
Are you unable to get your hands on fresh hatch chiles?
Whether it is out of season or not carried at your local grocery store, don’t fret.
You can substitute canned green chiles for fresh roasted hatch chiles!

Hatch Chile Frito Pie Recipe
Prep Time: 30 minutes
Cook Time: 60 minutes
Additional Time: 5 minutes
Serves: 8-10 people
Ingredients:
- 1 cup sweet onion, chopped
- 2 pound ground beef
- 1 clove garlic, minced
- 6 hatch chiles, roasted, peeled and chopped
- 18 ounce of Tomato sauce puree
- 1 teaspoon Salt
- ½ teaspoon Pepper
- 2 teaspoon Chili powder
- ½ teaspoon paprika
- 2 bay leaves
- Gallon plastic freezer bag
- 1 bag of Fritos or corn chips
- Sliced green onion, for garnish
- Sour cream, for garnish
Directions:
- Sear the outside of the hatch chiles on a grill, gas burner, or broil them in the oven until the skin chars and blisters.
- Place the roasted hatch green chiles in a plastic bag for 20 minutes to steam the peppers.
- Remove the peppers from the bag and peel the skin off of the peppers
- Remove the stem and seeds from the peppers and chop. If you like heat, keep the seeds and veins.
- Brown the ground beef, then add in the salt, pepper, chili powder, and paprika. Set aside.
- Add some olive oil to a stock pot or Dutch oven and saute your chopped onions until soft. Then add the diced chiles and minced garlic. Sauté until fragrant.
- Add the ground beef meat mixture, tomato sauce, and 2 bay leaves.
- Simmer the big pot of chili on medium-low heat for one hour.
- To serve your hatch chile Frito pie, scoop the chili over the bed of fritos. Then top with your favorite toppings such as sour cream, green onions, roasted hatch chiles, or shredded cheese.
NOTE:
Store leftover chili in an airtight container in the refrigerator.
