What Booze to Use in These Pineapple Coconut Jello Shots

The key to transforming this classic cocktail into fun jello shots comes down to the alcohol.

Obviously a pina colada uses rum, and you want to ensure you use clear white rum in order to not impact the colors of the jello shot layers.

We use coconut rum to pair with the pineapple jello. It recreates the flavors of a pina colada perfectly.

You can use any brand of coconut rum, but we always get the best results by using Blue Chair Bay Coconut Rum.

For some reason we think it tastes less artificial than other brands in this boozy jello shot.

Layered Pina Colada Jello Shots Recipe

Prep Time: 5 Minutes

Cooling Time: 3-4 Hours for Each Layer

Servings: 70 mini shot cups (1 oz each)

Ingredients:

  • 2 (1 ounce) packets of unflavored gelatin
  • 1/2 cup cold water
  • 3 1/2 cups boiling hot water, divided
  • 2 ½ cups of coconut rum, divided
  • 14 ounce can of sweetened condensed milk
  • 2 (3 ounce) packages of pineapple jello
  • 70 plastic shot cups
  • Optional garnishes: maraschino cherries, small pineapple wedges, or boozy whipped cream.

Directions:

  1. Stir 2 packets of unflavored gelatin in ½ cup of cold water. Mix the gelatin mixture until it is dissolved.
  2. Add in 1 ½ cups of boiling hot water as well as the 14 ounce can of sweetened condensed milk. Once well combined, add in ½ cup of coconut rum. Mix well.
  3. Line up 1 ounce jello shot containers on a cookie sheet, then fill them halfway with the coconut cream mixture.
  4. Refrigerate for at least 3 hours, preferably overnight.
  5. Next, bring 2 cups of water to boil and mix in two 3 ounce packages of pineapple jello powder. Then add in 2 cups of the coconut rum.
  6. Add the pineapple jello mixture on top of the set coconut layer.
  7. Let the pineapple layer set for at least 2 hours, preferably overnight. 
  8. If you want to top your pina colada jello shots with a maraschino cherry or a small pineapple wedge, do so after one hour of the pineapple jello setting time. Then continue to let the jello set until firm.
  9. Keep the jello shots cool prior to serving. You could even top them with boozy whipped cream as a garnish!

NOTE: The setting times for these layered jello shots are for a one ounce shot glass. A larger jello shot container will require more time to set. For best results, let the layers set overnight. If you do not allow the layers to fully set, it will cause a blurred, almost tie-dye like jello shot.

The jelly shots are good for 3-5 days in the refrigerator, so you can make them well ahead of time.
