This recipe is perfect for hosting a brunch for a bridal or baby shower and also easy enough to make on a weekend where you want to have a few friends or family over to graze on some brunch bites!
The mini quiches look adorable and pair perfectly with yogurt parfaits, bagels and lox, fresh fruit, and of course mimosas.

Phyllo Dough Quiche

It’s Athens Phyllo Shells! These precooked cups are light and airy and are the perfect crust for our mini quiche recipe.
Rather than complicating your brunch or elongating your cooking time by making or buying raw dough, these phyllo dough cups are fresh and ready to go right from the box!

Mini Quiche Flavors
Another reason why we adore this mini quiche recipe is because it is super versatile.
With this one recipe you can create a whole assortment of quiches based on preferred flavor combination and dietary needs!
Just take your favorite quiche recipe (like this spinach and ricotta quiche) and make it mini, or pull from some of our favorite flavor combinations.
For our brunch spread we made three types of mini quiches:
- Bacon and Cheddar
- Mushroom and Parmesan
- Roasted Red Pepper and Feta
Other popular flavors of quiches include ham and cheese, spinach and artichoke, or a Florentine quiche.
With this recipe, the world is your oyster on the combinations that you create!
Mini Quiche Recipe
Prep time: 5 minutes
Cook time: 12-14 minutes
Total time: 17-19 minutes
Makes 30 mini quiches
Ingredients:
- 2 eggs
- ⅓ cup cream
- 2 packs of Athens phyllo shells
- Mini quiche fillings of choice
- Salt and pepper
- Preheat your oven to 325 degrees and place your Athens Phyllo Shells on a baking sheet.
- Scramble together the eggs, heavy cream, salt and pepper.
- If your selected fillings require to be cooked, such as bacon or sautéed mushrooms, precook your fillings before building your mini quiches.
- Fill the mini quiches with your preferred quiche flavor fillings, about halfway full.
- Using a measuring cup or bowl with a spout, fill the mini phyllo cups to the top with the egg mixture.
- Gently transfer to an oven to bake for 12-14 minutes until the eggs have set.
- Serve and enjoy!
