Phyllo Dough Greek Flatbread Pizza

We took a twist on a weeknight favorite by swapping traditional pizza dough for a light and airy phyllo dough pizza crust.

The light-as-air texture is a perfect way to lighten up dinner during hot summer days.

Technically it’s not officially summer yet, however Texas has already experienced 100+ degrees this week. Holy moly!

Our goal was to cook dinner, but not heat up the house. Thus, we fired up our grill.

This grilled greek pizza recipe can be made on the grill on a baking sheet but if you don’t have a grill, you can easily make this Greek flatbread pizza in your oven as well.

How to make a phyllo pizza crust 

Our Greek pizza crust recipe required zero kneading and made a minimal mess, thanks to phyllo.

The phyllo dough pizza crust is made by layering sheet after sheet of Athens phyllo dough brushed with olive oil.  

For additional flavor, consider adding herbs or cheese between the layers!

How to grill phyllo pizza

Since the crust is very delicate, we opted to grill the Greek flatbread on indirect heat. This ensured that the flaky crust didn’t burn.

We used the heat from our Traeger smoker to cook this flatbread pizza but if you have a traditional gas grill, consider turning on one burner to medium low heat and place the pizza on the grates that are set to “off”. This will heat the grill without the risk of burning. 

The temperature gauge on your grill will be your guide.Preheat the oven to 375 degrees.

The key is to start by cooking just the phyllo pizza crust for 5 minutes prior to adding toppings. This will ensure the entire crust gets bubbly and flaky and it is not weighed down by all the other topping ingredients.

After 5 minutes you’ll see the crust has risen a bit and turned a light brown. Then it’s time to remove the crust and bring it to the kitchen to top the crust!

Finishing your Greek flatbread recipe

Once your crust is ready for toppings, reach for your “sauce”.

For this pizza made with phyllo dough, we used store-bought spinach and artichoke dip as the sauce base. Just add dollops of dip and spread with the back of a spoon.

You can also choose to use marinara sauce or an olive oil drizzle instead.

Next, top your pizza with all the Greek toppings!

We reached for sliced kalamata olives, minced garlic, roasted red peppers, and tomato slices. 

For cheese, we used both finely shredded mozzarella and crumbled feta. 

Don’t skimp on the feta, it adds SO much Greek flavor!

If you’re looking to get creative with toppings, we’d also recommend chopped red onion, fresh spinach, or more artichoke hearts.

Garnish your pizza with fresh herbs, slice, and serve!

Greek Pizza Recipe

Serves 4-6

  • 16 Sheets Athens phyllo dough
  • Olive oil spray
  • 8 oz. spinach and artichoke dip
  • 1 cup mozzarella cheese
  • ¼ cup crumbled feta
  • 6 kalamata olives, halved
  • 2 cloves garlic, minced
  • 2 small tomatoes, thinly sliced
  • 2 pieces of roasted red pepper, sliced 
  • Salt and pepper, to taste
  • Fresh thyme, for garnish
  1. Start by removing one roll of Athens Phyllo Dough from the freezer to thaw, following thawing instructions on the package.
  2. Unroll and cover phyllo sheets with plastic wrap and then a slightly damp towel to prevent drying out.
  3. Preheat your grill or oven to 375 degrees.
  4. Spritz a baking sheet with olive oil spray.
  5. Lay down a sheet of phyllo dough, lightly spritz with olive oil, then top with another sheet of phyllo dough.
  6. Repeat this with 16 sheets of phyllo dough. Including spraying the top with olive oil as well.
  7. Place the crust in the grill and cook for 5 minutes until the dough rises and the phyllo dough starts to turn a light golden brown.
  8. Remove from the grill.
  9. Spoon a number of dollops of spinach artichoke dip on the crust and gently spread out on the phyllo crust.
  10. Next, top with garlic, cheese, roasted red pepper, tomato, and olives.
  11. Return to the grill or oven for another 15 until golden brown tomatoes soften and cheese melted.
  12. Season with salt , pepper, and thyme. Then slice and devour!

Grill on indirect heat by turning on an adjacent burner.

This can also be made in an oven.
