This one pan Mediterranean salmon recipe takes all the best ingredients from Greece into a healthy dinner in only 15 minutes!
This simple baked salmon recipe is a healthy option to make during busy weeknights.
We were inspired by our Mediterranean Grilled Salmon Skewer Recipe that we throw on the grill every summer, combined with the Marinated Olives and Feta that we add to our grazing tables and charcuterie boards.
This recipe is transformed into a one pan meal that is perfect for any season.
The salmon takes on fantastic big flavor from the marinade and cooks alongside delicious and healthy fresh vegetables.

Once it’s perfectly cooked, the top of the fish is covered with the most irresistible marinated feta! The feta topping takes this salmon to the next level and is packed with flavor.
This recipe with fresh Mediterranean flavors is easy enough for a fast, healthy well-rounded dinner but also elevated enough for a dinner party or a meal to celebrate special occasions.

What Kind of Salmon to Use For this Mediterranean Salmon Recipe
For this recipe we reached for Mowi Atlantic salmon.
We love Mowi because the fresh fish is sealed in a special packaging, which allows air to escape, but not enter the packaging, which results in the best flavor.

The variety of salmon that you use for this easy salmon recipe is all based on personal preference.
Whether it is sockeye salmon, coho salmon, or king salmon, the flavors will all blend well.
You’ll just want to adjust your cooking time based on the thickness of the fish.

How to Cook Salmon
There are a number of ways to cook salmon, and they all turn out fantastic.
We love to sous vide salmon when infusing the marinade into the fish, we love to skewer salmon and pop it on the grill, but probably our favorite way to prepare salmon is to cook it in a skillet to achieve a nice crisp skin.
For this recipe, we start the fish on a cold pan in the skillet in order to achieve that crisp skin, then finish it in the oven until the fish is cooked to a perfect medium doneness.

Variations to this Baked Mediterranean Salmon Recipe
While we love this salmon recipe as is, it’s super versatile!
Feel free to add in additional vegetables to your skillet or baking dish when roasting the salmon.
For a kiss of extra saltiness, add Greek kalamata olives or capers.
For a touch of sweetness, use sun-dried tomatoes.
To pack in more veggies, throw in additional bell peppers, artichoke hearts, or even asparagus, which are also tasty additions.

What to Serve with this Mediterranean Salmon Recipe
We opted to serve the salmon and vegetables on a bed of orzo that was tossed with olive oil and lemon juice, but the options are endless!
Reach for white rice or crispy smashed potatoes for a different starch option.
If you’re watching calories, this delicious dish is perfect on a fresh salad, cauliflower rice, or served with side dishes of air fryer broccolini, green beans, or even the viral cucumber salad.

Baked Mediterranean Salmon Recipe with Marinated Feta
Prep Time: 5 Minutes
Cook Time: 10 Minutes
Serves: 2 salmon filets
Ingredients:
- 2 Mowi skin-on Atlantic Salmon filets (if using a large salmon fillet, cut into individual portions)
- 4 Tablespoons extra virgin olive oil, divided
- Zest of one lemon (about 1 Tablespoon)
- Juice of half of a lemon (about 1 Tablespoon)
- 2 Garlic cloves, minced
- 3-4 Sprigs of Fresh Greek oregano, de-stemmed and chopped
- 3-4 Sprigs of Fresh dill, de-stemmed and chopped
- Salt, to taste
- Black pepper, to taste
- 2-4 thinly sliced lemon slices
- 12 cherry tomatoes
- 1 shallot, thinly sliced
- Feta cheese
- Lemon zest, to finish
Directions:
- Preheat your oven to 400 degrees F.
- Meanwhile, in a small bowl, mix together 2 Tablespoons of the olive oil, lemon zest, lemon juice, garlic, dill, oregano, salt and pepper. This will make a coarse marinade that will go on top of the salmon as well as the herbaceous seasoning that will be mixed witht the feta cheese.
- Pat the salmon dry with a paper towel, then season the salmon on both sides with salt and pepper. Then, lay skin side down in a cold, oven safe skillet.
- Place the skillet on a burner on medium high heat for 4 minutes to start to crisp the skin.
- Then top each of the salmon filets with the 1/3 of the coarse marinade as well as the thinly sliced lemons. Reserve the final third of the marinade for the feta topper.
- Add the cherry tomatoes and sliced shallot to the pan.
- Place in the preheated oven and bake for 5 minutes or until the salmon reaches an internal temperature of 145 degrees F. The baking time will vary depending on the thickness of your salmon.
- Meanwhile, In a separate small bowl, add the final third of the coarse marinade with the feta with the remaining 1-2 tablespoons of olive oil.
- Remove the pan from the oven, add on top of orzo or rice, and top with marinated feta.
Note: Store any leftovers in an airtight container.
